Chef Vinnie Cimino and proprietor Andrew Watts have opened Delia's, a purpose-built fried chicken and JoJo concept, on the Street Level concourse of Rocket Arena near Portal 26, debuting for the Cleveland Cavaliers' first preseason home game of the 2026-27 season. The concept is a direct spinoff of Cordelia, the duo's East 4th Street full-service restaurant, and represents Rock Entertainment Group's continued push to embed locally recognized chef-driven brands into the arena's food-and-beverage mix.

The Concept

Designed explicitly for high-volume throughput, Delia's narrows the menu to a focused set of items: mix-and-match drumsticks and boneless thighs sold in two- and three-piece Buckets, a fried chicken sandwich finished with Chef Cimino's Magic Dust, a miso-marinated grilled chicken sandwich, and a Midwest Polish Boy — a nod to the Cleveland street-food classic. Sides anchor around malt vinegar-rinsed JoJo fries, pimento potato salad, and coleslaw, rounded out by four house-made sauces including black garlic mayo and Cleveland ketchup. The tight SKU count is a deliberate operational choice: fewer items, faster ticket times, higher throughput per event.

"Delia's is Cordelia made faster and more casual, but with the same heart," said Chef Cimino, a three-time James Beard Award nominee and Food & Wine Best New Chef. "We wanted to cook food that people can spot from across the concourse, get in their hands quickly and still feel like they're eating something made with real care."

Stadium F&B Stakes

The opening reflects a broader industry shift in sports venue foodservice, where arena operators are moving away from generic concession portfolios toward curated local and celebrity-chef partnerships to drive per-capita spending and differentiate the gameday experience. Rocket Arena hosts nearly 200 ticketed events annually and draws approximately 1.6 million patrons to downtown Cleveland, giving Delia's a substantial captive audience across multiple dayparts beyond basketball alone — including concerts, family shows, and the annual MAC Basketball Tournaments.

Chris Kaiser, Chief Marketing Officer for the Cleveland Cavaliers and Rock Entertainment Group, framed the partnership as a brand-equity play as much as a food-quality upgrade. "Bringing Delia's into our venue deepens our commitment to great Cleveland brands and enhances the best gameday experience in sports," Kaiser said. Cordelia's proximity to the arena — already a pre- and post-game destination on East 4th Street — gave the collaboration natural market logic before a single ticket was sold.

What It Means for Operators

For foodservice operators watching the sports-venue channel, the Delia's model illustrates a scalable template: take a proven full-service concept, strip it to its highest-margin core items, redesign the physical footprint for rapid service, and align the brand identity closely enough to the parent restaurant that equity transfers without confusion. The storefront-style buildout — white brick, hand-painted signage, an illustrated portrait of Delia herself — reinforces that continuity while giving the concession stand a distinct retail presence within the concourse.

Watts put the positioning plainly: "The concession experience is usually pretty transactional, and we saw a chance to change that. We wanted Delia's to feel like a real neighborhood chicken joint that just happens to live inside the arena." Whether that hospitality-forward approach can sustain throughput during peak arena traffic will be the operational test of the 2026-27 season — and a data point the broader sports-venue foodservice sector will be watching closely.
