The Program

P.F. Chang's is deploying a multi-pronged bar and menu strategy designed to capture weekday afternoon traffic, adding a structured Happy Hour, a reorganized wine list, and three premium entrées that graduate from limited-time to permanent status. The moves reflect a broader casual-dining playbook aimed at shoring up the 3-to-6 p.m. daypart, where traffic has remained a stubborn gap for full-service operators.

The Happy Hour runs Monday through Friday from 3 to 6 p.m. in the bar and on the patio at participating locations. Price points are built for frequency: $6 select beer and wine, $9 cocktails, $12 full-size appetizers, and a $15 Sushi & Sip pairing that bundles a Spicy Tuna or California Roll with either a Sapporo draft or a single-serve Joto One "Graffiti Cup" Sake. A new sake category and a $12 Japanese whisky flight — featuring Toki, Mars Iwai 45, and Nikka Coffey Grain — round out the bar additions. A separate Wine Wednesday promotion offers half-price bottles of wine, Champagne, and sake all day for dine-in guests.

Wine List Redesign

The overhauled wine list is organized by flavor profile — from Sparkling & Refreshing to Full & Bold — rather than by varietal, a presentation shift increasingly common among casual chains looking to reduce decision fatigue and drive attach rates. Seven Daughters Moscato, the #1-selling Moscato in U.S. on-premise establishments according to Somm.ai, is featured by the glass and bottle and positioned as the suggested pairing for P.F. Chang's Dynamite Shrimp. Taraji P. Henson serves as strategic advisor and creative collaborator for Seven Daughters, a Terlato Wine Group label. Other additions include Gratien Meyer Crémant de Loire Brut Rosé, Belle Glos "Las Alturas" Pinot Noir, Stags' Leap "Aveta" Sauvignon Blanc, Penfolds Max's Shiraz, and DAOU Cabernet Sauvignon, broadening the list's price and style range. Pairing suggestions now appear alongside select dishes throughout the menu, a cross-sell tactic that can lift per-person check averages when executed consistently by service staff.

Menu Permanence

Three entrées that drove guest engagement as LTOs now hold permanent slots in a newly expanded Chef's Favorites section: NY Prime Strip Steak Tataki with yuzu ponzu and togarashi aioli; Lobster & Prawn Fried Rice with cremini mushrooms and lobster sauce; and Oolong Chilean Sea Bass, a wild-caught, tea-marinated fillet. The sushi lineup also expands with Spicy Tuna Crispy Rice, Tiger Roll, Philly Roll, and a shareable Sushi Boat. Lobster & Prawn Fried Rice and Oolong Chilean Sea Bass are available for takeout and delivery, extending off-premise revenue potential for two of the chain's higher-ticket items.

"Happy Hour should be an opportunity to experience what our kitchen does best," said Steve Solis, VP of Culinary at P.F. Chang's. "With full-size appetizers and the new Sushi & Sip pairing, we're putting the food front and center and giving guests a reason to make us part of their weekday plans."

Founded in 1993 and operating more than 300 restaurants across 23 countries and U.S. airport locations, P.F. Chang's is pressing beverage and daypart strategy at a moment when casual-dining peers are similarly chasing frequency through bar program investment and limited-time beverage innovation. The chain's willingness to lock premium LTOs into permanent rotation signals confidence in check-average support — a key lever for full-service operators managing labor and food-cost pressure.
