Paris Baguette is adding a ghost pepper dimension to its Halloween limited-time lineup, deploying two new sweet-heat SKUs across its North American bakery-café network beginning October 1. The move positions the franchise — which projects 1,000 cafés by 2030 — squarely in the spicy-sweet flavor trend that has driven incremental check growth across the broader bakery and QSR segments in recent seasons.
The two new items, a Ghost Pepper Chocolate Marble Mochi Donut and a Ghost Pepper Iced Hot Chocolate, pair ghost pepper heat with chocolate across both food and beverage dayparts. The donut extends Paris Baguette's signature mochi format — already a unit-differentiator against conventional QSR donut competitors — while the iced hot chocolate targets the afternoon beverage occasion. Both items run through November 1, giving operators a 32-day promotional window that spans peak Halloween traffic and captures any post-holiday sellthrough.
Returning SKUs and Catering Volume
Alongside the new ghost pepper builds, the chain is returning several high-visibility seasonal SKUs: a Halloween Scream Donut stuffed with cookies-and-cream filling, a Spider Mochi Donut, a Vanilla Scream Ghost Cake layered with pastry cream and fresh strawberries, and a Dirt-and-Worms Chocolate Chiffon Cake available as a whole cake or by the slice. The Dirt-and-Worms Frappe rounds out the beverage side of the holiday menu.
For catering-channel operators and franchisees, Paris Baguette is offering a Halloween Donut Box — a 12-count assortment of Spider Mochi and Halloween Scream Donuts — explicitly positioned for office and classroom occasions. Catering remains an underpenetrated revenue stream for bakery-café concepts relative to pizza and sandwich chains; a pre-packaged seasonal box with a clear gifting occasion is a low-friction entry point for B2B volume.
Loyalty Economics
Chief Marketing Officer Cathy Chavenet framed the program around the dual goals of novelty and nostalgia. "We wanted to surprise and delight with something unexpected — the fiery kick of ghost pepper paired with rich, indulgent chocolate — while still embracing the nostalgia that makes Halloween so special," she said.
The loyalty calendar supporting the LTO window is dense. PB Rewards members receive a free medium coffee with any purchase on National Coffee Day (September 29), a buy-one-get-one pastry on Boss's Day (October 16), 100 bonus points on More Points Mondays from October 5 through October 26, a free pastry with any beverage purchase on Halloween (October 31), and a $0.13 pastry on Friday the 13th in November. New member acquisition is incentivized through a welcome pastry for first-time app sign-ups — a standard loyalty-enrollment mechanic increasingly common across fast-casual and bakery-café chains competing for digital wallet share.
For Paris Baguette franchisees, the program delivers a structured promotional calendar that reduces local marketing lift while driving frequency across multiple dayparts.
