Chef Daniel Humm of three-Michelin-starred Eleven Madison Park and CPG operator Mark Ramadan have launched Riff, a line of shelf-stable meal kits priced at $6.99 per box, now available at Target locations nationwide and direct-to-consumer online. The five-SKU debut — 18 months in development — positions the brand at the intersection of premium ingredients and true pantry convenience, requiring only one pot and 20 minutes of cook time.
The Product Lineup
Every Riff box contains three components: organic bronze-cut or air-dried noodles, a Chef Humm-formulated seasoning mix, and a crunchy topping. The launch collection spans Spicy Tomato Rigatoni, Creamy Parmesan Cavatappi, Garlic Lemon Rotini, Sesame Ginger Noodles, and Coconut Curry Noodles. Formulations rely on dehydrated vegetables, real spices, and ingredients such as coconut milk and toasted sesame rather than artificial flavorings or ultra-processed fillers — a deliberate departure from center-store legacy formats that Ramadan argues have gone largely unchanged since the 1970s.
Founders' Complementary Playbook
Ramadan brings a specific operational track record to the venture: he co-founded Sir Kensington's and later served as CEO of Hu Kitchen, executing two exits while repositioning legacy grocery categories around clean-label, premium positioning. "We saw a huge opportunity to close that gap without compromise," Ramadan said, framing Riff as an answer to the distance between consumers' cooking aspirations and weeknight reality. Humm's role extends beyond branding — his culinary team led the R&D process, applying fine-dining standards to a shelf-stable format, a technically demanding translation from restaurant kitchen to retail supply chain.
Center-Store Bet
The launch arrives as the broader meal-kit segment continues to recalibrate. Subscription-based, direct-to-consumer models face persistent challenges around churn, cold-chain logistics costs, and consumer fatigue with locked-in cadences. Riff's shelf-stable, no-subscription model sidesteps those unit-economics headaches entirely, trading delivery margin pressure for the competitive dynamics of retail velocity and slotting at mass retail. At $6.99, the kit undercuts most DTC meal-kit per-serving costs while sitting above commodity center-store pasta SKUs — a deliberate premium-value wedge.
Target's nationwide distribution gives Riff immediate scale and exposure to the retailer's ingredient-conscious shopper base, a demographic that has driven growth in better-for-you and clean-label CPG categories across food and beverage. The brand also sells direct at eatriff.com, preserving a first-party data channel and margin optionality as it scales. Whether Riff can generate the retail velocity needed to hold and expand shelf space will be the first real test of the founders' thesis that fine-dining credibility and CPG distribution expertise can reliably convert to repeat center-store purchases.
