The move signals the brand's intent to capture volume in one of packaged bakery's fastest-growing subcategories. According to a October 2025 Puratos report on bakery trends, 70% of consumers say sourdough enhances bread flavor — a sentiment that has pushed artisan-style positioning well beyond specialty grocery into mass and club channels.

The New SKUs

The three varieties span different consumption occasions and dayparts. The flagship Sourdough bagel targets the classic morning meal and breakfast-sandwich build. Hearty Grains & Seeds adds texture and a more substantial nutritional profile suited to premium meal occasions. Lemon Blueberry, the most differentiated entry, courts the sweet-breakfast daypart and positions against flavored cream-cheese pairings increasingly popular in both retail and foodservice grab-and-go sets.

The Rustik Oven's existing sourdough bread line uses a 12-hour fermentation process and slow baking — process claims the brand is now leveraging to support the bagel launch's artisan-style credibility. That production backstory matters as operators and retail buyers field growing consumer skepticism toward "artisan" labeling that lacks process differentiation.
