Taco Bell is activating its second consecutive dessert collaboration with craft ice cream brand Salt & Straw, rolling the $3.99 Salt & Straw Churro Ice Cream Taco into its roughly 10,000 U.S. units beginning September 1 for a limited time. The item — a waffle cone shell filled with churro-flavored ice cream, finished with puffed rice and a dark chocolate-flavored coating — was developed exclusively for Taco Bell by Salt & Straw's production team and is available at the front counter, kiosk, and drive-thru.

The LTO follows last year's Tacolate debut, which sold out on launch weekend and generated lines at Salt & Straw scoop shops. That sell-through velocity is the direct rationale for expanding the program to Taco Bell's full domestic footprint rather than a regional test. The collaboration also marks the first branded LTO for Live Más Café, Taco Bell's premium beverage sub-concept operating in California, Las Vegas, Houston, and Dallas. The Salt & Straw Choco-Waffle Chiller — starting at $4.69 — encases a vanilla ice cream base blended with churro crumbles and waffle cone pieces inside a crackable chocolate shell, topped with whipped cream and additional waffle cone pieces. The Chiller daypart play is designed to extend the collaboration's reach into the beverage occasion and drive incremental traffic to Live Más Café locations beyond the ice cream taco's run.

Tyler Malek, co-founder and head ice cream maker at Salt & Straw, noted the geographic scale-up as a deliberate step beyond the brand's 57 scoop shops: "When we had the chance to take the idea beyond our shops with Taco Bell, we wanted to dream up something completely new."

Loyalty and Scarcity Mechanics

Taco Bell is layering a Rewards-member sweepstakes onto the LTO to drive app engagement. On September 8 at 2 p.m. PT, Taco Bell Rewards members can enter a Tuesday Drop for one of 100 limited-edition Salt & Straw x Taco Bell branded coolers, each packed with three Churro Ice Cream Tacos. The prize pool carries a total ARV of $3,500. The mechanic follows an established QSR pattern of using loyalty-gated scarcity drops to deepen digital enrollment and first-party data capture — a channel strategy that operators across the fast-food segment have accelerated as third-party delivery platforms compress margin.
