Catch Hospitality Group will open The Corner Store at The Cosmopolitan of Las Vegas on November 9, marking the first expansion of the SoHo-born concept beyond its original New York footprint. Reservations are now live, putting the elevated American dining room squarely on the Strip's fall opening calendar.
The Concept & Menu
Chef Michael Vignola leads the culinary program in collaboration with Executive Chef Daniel Bernardo. The menu centers on an ingredient-first take on American classics — Lobster & Caviar Rolls with tarragon-celery remoulade, a Wagyu French Dip built on a 72-hour slow-roasted Westholme Australian ribeye, and Five Cheese Pizza Rolls with whipped ranch. A Las Vegas-exclusive Butcher's Counter anchors the room with premium cuts including a Rosewood Ranch Wagyu Tomahawk and Wagyu Porterhouse, extending the check-average opportunity well beyond the New York original's positioning.
The beverage program, led by Catch Hospitality Group Beverage Director Lucas Robinson alongside The Cosmopolitan's Head of Mixology Gedeon Tsegaye, keeps the Martini at center stage. Signature SoHo pours — the Tomato Martini and Sour Cream & Onion Martini — transfer to the Las Vegas menu, joined by Strip-exclusive creations. A large-format Martini Service designed for two to three guests adds a shareable, high-revenue daypart component. Wine curation falls to Catch Wine Director Emily Buse, recognized by Wine Spectator as one of the top 50 sommeliers in the U.S., and MGM Resorts Master Sommelier and Executive Director of Wine Douglas Kim.
Design & Footprint
Rockwell Group — the firm behind the original SoHo location — designed the Las Vegas outpost, translating the concept's neighborhood-bar warmth to The Cosmopolitan's third floor. The layout moves guests through a main bar, a dedicated Martini Room anchored by a green onyx bar, and a main dining room modeled on vintage train-car aesthetics. A private dining room accommodates up to 24 covers and can be partitioned into two smaller event spaces, providing meaningful private-dining revenue alongside the main floor.
MGM–Catch Partnership Context
The opening deepens a resort-restaurant relationship that began when Catch debuted at ARIA Resort & Casino in 2018. That MGM venue preceded Catch's subsequent expansion to Miami Beach, Dallas, Scottsdale, and Mexico City. For integrated resort foodservice, long-term operator partnerships like this have become a reliable unit-growth mechanism — brand equity travels with the concept while the resort provides captive traffic and marketing infrastructure. The Corner Store's premium price point and cocktail-forward program align with The Cosmopolitan's high-ADR guest profile and its ambition to maintain a competitive culinary tenant mix on a Strip increasingly defined by chef-driven independents and branded imports.
Catch Hospitality Group has also signaled continued expansion: a new concept is slated for 9 West 57th Street in New York in 2027, suggesting the group is threading a multi-unit, multi-market growth strategy alongside its standalone portfolio additions — including Cafe Charmant in the West Village. The Corner Store Las Vegas operates Sunday through Thursday, 5 p.m. to 10 p.m., and Friday through Saturday, 5 p.m. to late.
