The Deal
Tropical Smoothie Cafe has signed a 40-unit area development agreement with Aurify Kingstar, a New York-based multi-brand restaurant investment and operating company, to build out the fast-casual smoothie chain's footprint across Albany, Westchester County, the Bronx, and Western Connecticut. The first unit is scheduled to open in early 2027.
The agreement arrives as the brand approaches a significant milestone: with more than 1,750 cafes currently open across 44 states, Tropical Smoothie Cafe expects to reach its 1,800th location by year-end 2026. To steer that expansion, the Atlanta-based chain recently appointed Joe Sieve as Chief Development & Growth Officer.
The Operator Profile
Aurify Kingstar brings substantial multi-unit credibility to the arrangement. Co-founded by Andy Stern and John Rigos, the company has developed, operated, or acquired more than 300 restaurants over 25-plus years, spanning franchise brands including Five Guys and Wingstop as well as proprietary concepts such as Melt Shop and Little Beet. Jeremy Tannenbaum joins Stern and Rigos in leading the Tropical Smoothie Cafe development effort. "We see a tremendous opportunity to build Tropical Smoothie Cafe's presence throughout the Northeast, create great experiences for our guests, and establish meaningful connections in each community we enter," Tannenbaum said.
For Tropical Smoothie Cafe, selecting an operator with an established Northeast infrastructure and proven ability to scale is consistent with the brand's stated franchisee-qualification criteria. CEO Max Wetzel cited Aurify Kingstar's restaurant experience and multi-unit development capabilities as central to the decision. "Together, we can meaningfully expand our presence in the Northeast while continuing to deliver the guest experience and community connection that define our brand," Wetzel said.
Northeast Whitespace
The Northeast has historically been underpenetrated territory for fast-casual smoothie and better-for-you chains, with higher real estate costs and dense urban formats creating barriers to entry that favor experienced operators. Tropical Smoothie Cafe's move into markets like the Bronx and Westchester County signals a deliberate push into high-density, high-traffic corridors where off-premise and grab-and-go dayparts are increasingly competitive. The brand competes in the smoothie and juice segment, where it has held the No. 1 franchise ranking in Entrepreneur's Franchise 500 for six consecutive years — a credential that carries weight in franchisee recruitment conversations.
The deal is part of a broader franchise development push at Tropical Smoothie Cafe, which continues to attract multi-unit franchisees seeking brands with available development whitespace and proven unit economics. Operators evaluating the better-for-you fast-casual segment are weighing Tropical Smoothie Cafe against a growing field of health-forward competitors, making regional density and brand recognition in new markets increasingly important levers.
