The co-founders of xtraCHEF are back in restaurant technology. Andrew Schwartz and Bhavik Patel, who built xtraCHEF into a back-office platform before its acquisition by Toast, have launched Tandem, an AI company purpose-built for restaurant operators. Acclaimed Philadelphia chef and restaurateur Michael Schulson, founder of Schulson Collective, has joined as a Founding Partner, embedding operator perspective directly into the product from day one.
The Launch Numbers
Tandem has closed an initial seed financing round — terms were not disclosed — to fund engineering hires, deepen technology integrations and scale deployments. The platform is already live across 100 restaurant locations through a structured pilot program, with a growing waitlist of multi-unit groups seeking access. Schwartz serves as CEO, Patel as CPO and CTO; Schulson rounds out the founding team with hands-on operational credibility that is increasingly rare in restaurant-tech startups.
The Operator Problem Tandem Is Solving
The pitch addresses a structural friction point that has widened as the restaurant technology stack has grown more fragmented. Operators today run point-of-sale, labor scheduling, accounting, inventory, purchasing, reservations, delivery aggregation and marketing tools as largely siloed systems. Staff manually bridge those platforms — exporting data, reconciling figures, identifying discrepancies — consuming labor hours that do not directly serve guests or drive revenue.
Rather than adding a new dashboard to that stack, Tandem is building AI agents designed to work across systems operators already use. The agents are intended to analyze data from multiple sources, flag issues requiring attention, automate repetitive administrative workflows and, critically, execute actions across platforms rather than simply surfacing recommendations. Schwartz describes the goal as technology that "works alongside the operator" rather than requiring operators to work the technology.
The approach mirrors a broader shift in enterprise software toward agentic AI — systems that reason and act rather than just display — and Tandem is among the first restaurant-specific startups to stake a commercial position on that architecture. The company is developing integrations across the restaurant technology ecosystem to avoid requiring operators to rip and replace existing infrastructure, a significant barrier to adoption that has slowed category rollouts from prior-generation platforms.
Schulson's Role and the Operator-First Thesis
Schulson's involvement as a Founding Partner is more than advisory branding. Tandem is positioning his operational experience — building and running high-volume, multi-concept restaurant groups — as a direct input into product prioritization. The company's stated framework is to identify workflows that consume team time and ask whether AI can absorb that work reliably. Schulson said the opportunity is specifically in problems "operators actually deal with every day," a pointed signal that Tandem intends to stay close to labor, purchasing and day-to-day operational management rather than chasing guest-facing or marketing-first use cases.
For the foodservice technology market, the Tandem launch arrives as restaurant operators face persistent cost pressure across food and labor, making back-of-house efficiency tools a high-priority spend category. AI-assisted operations — from automated invoice processing to predictive scheduling — are moving from pilot curiosity to budget line item at mid-market and enterprise chain operators alike. Tandem's xtraCHEF lineage gives it immediate credibility with the independent and emerging-chain segment that built the predecessor platform's user base, a foundation that should accelerate the waitlist conversion Schwartz and Patel are targeting as they scale out of pilot into broader commercial deployment.
