Category Expansion

Carbone Fine Food is moving beyond the pasta sauce shelf for the first time since its 2021 launch, introducing two Italian-inspired chili crisp varieties — Calabrian Chili Crisp and Aglio e Peperoncino — exclusively at Whole Foods Market beginning September 8. The 6 oz. jars retail at $13.99 each, with distribution extending to Amazon and the brand's direct-to-consumer channel.

Both SKUs are built on a 100% olive oil base combined with blends of peppers, onion and garlic, positioning the line as a finishing condiment across a broad range of applications: pizza, pasta, grilled proteins, seafood and vegetables. The Calabrian variety leads with front-of-the-tongue heat from Calabrian chili and red bell pepper, while the milder Aglio e Peperoncino draws on green bell pepper, hot pepper, parsley and garlic — a nod to a standing menu item at the Carbone restaurant.

Retail Growth Play

For the brand's retail operation, the launch represents a deliberate shelf-extension strategy. Chef and co-founder Mario Carbone described the new line as "a hero product that can make a meal feel special," while CEO Eric Skae framed the move as part of building a broader pantry of chef-driven products. "Italian Chili Crisp gives us an opportunity to bring another piece of the Carbone restaurant experience into people's homes in a way that feels both familiar and entirely new," Skae said.

The timing is strategically sound. The chili crisp category has expanded well past its Asian-condiment origins into a crowded but still growth-stage segment at premium grocery. A chef-branded Italian interpretation at a $13.99 price point targets the same premium-pantry consumer who has driven Carbone Fine Food's pasta sauce success in natural and specialty channels. Whole Foods' positioning as a launchpad for premium food brands — and the channel's outsized overlap with restaurant-aware, culinary-engaged shoppers — makes it a logical exclusive debut partner for a brand built on restaurant provenance. For operators tracking consumer packaged goods crossover trends, this kind of channel extension from a fine-dining IP is increasingly common, as brands seek recurring revenue beyond fluctuating cover counts.

Activation Strategy

To support the launch, Carbone Fine Food is staging a three-city invite-only pizza event circuit in partnership with Capital One, beginning September 17 in New York City at Lucali, followed by Los Angeles at Prince Street Pizza on September 29 and Chicago at Dimmi Dimmi on October 6. Capital One cardholders can access tickets through the Capital One Entertainment platform. The experiential format — centering on pizza as a use-case vehicle for the chili crisp — is a deliberate on-premise-adjacent play that keeps the brand visible in the foodservice and hospitality ecosystem even as it builds out its retail presence.

Monica Weaver, Head of Branded Card Partnerships and Experiences at Capital One, noted the fit between the cardholder base and premium dining discovery. That partnership layer adds a meaningful media amplification component to what would otherwise be a standard grocery launch, giving Carbone Fine Food earned-media reach across three major markets without committing to a broad retail rollout before proving velocity at Whole Foods.

For foodservice operators and brand licensors, Carbone Fine Food's condiment pivot illustrates a widening playbook: restaurant IP that proved itself in the sauce aisle is now testing adjacent condiment categories where margin structures and repeat-purchase rates can meaningfully supplement the restaurant P&L.
