The Fall Lineup

Corner Bakery Cafe is leaning into seasonal demand with the return of its Pumpkin Latte — available hot, iced, or as a cold brew — alongside a Pumpkin Muffin and eight additional fresh-baked items added to the bakery case for fall. The LTO window runs through December 31 at participating locations, giving the fast-casual chain a roughly four-month platform to drive bakery-daypart traffic.

The broader fall bakery case includes a Lemon Muffin, Lemon Tart, Salted Brown Butter Krispie Bar, Pecan Chocolate Chunk Bar, Tuxedo Butter Cake, Almond Butter Cake, Chocolate Peanut Butter Cake, and Fudge Brownie. The depth of the lineup signals an effort to extend the average check across multiple dayparts — morning coffee occasions through afternoon snack windows — rather than anchoring the season to a single hero SKU.

Catering Push

Alongside the menu refresh, Corner Bakery is offering 15% off catering orders of $200 or more throughout September, targeting the return-to-office cycle and Q4 corporate event calendar. Catering packages span breakfast trays, sandwich and panini platters, salads, soups, fresh-baked sweets, and beverage packages — a full-occasion format suited for meetings and team meals. For a fast-casual chain with 18-state footprint coverage, catering represents a meaningful off-premise revenue layer that does not require additional unit growth to scale.

Erin Hasselgren, president of Corner Bakery Cafe, framed the fall activation as a balance between novelty and brand consistency. "This fall lineup gives guests more variety throughout the day, whether they're starting the morning with coffee, taking a break in the afternoon or bringing something sweet back to the office," Hasselgren said. "It's all about keeping the experience fresh while staying true to the bakery quality our guests expect."

Competitive Context

The pumpkin-spice seasonal is effectively table stakes across the fast-casual and QSR bakery-café segment by late summer, with major competitors activating similar LTO windows to capture early-fall consumer sentiment. What differentiates execution at this stage is bakery-case breadth and catering attach rates. Corner Bakery's nine-item case expansion — versus a single seasonal SKU — positions the brand to capture incremental basket size beyond the beverage ring. The September catering discount, timed to post-Labor Day corporate re-engagement, targets a channel that typically carries higher average order values than dine-in or counter transactions.

Owned by a Dallas-based affiliate of SSCP, Corner Bakery Cafe operates across 18 states and Washington, D.C. The chain's franchise and catering development trajectory remains a key lever for SSCP as it looks to expand the brand's off-premise mix. Operators in the bakery-café segment broadly have prioritized catering and group-occasion revenue since the post-pandemic normalization of hybrid work schedules shifted weekday in-café traffic patterns.
