The Concept
Four Seasons Resort Maui at Wailea has opened Pantry Maui, a new all-day café developed in collaboration with Los Angeles-based lifestyle brand Madhappy, marking the concept's first standalone location and its first footprint in Hawaii. The café operates daily from 6 AM to 6 PM, serving resort guests and local visitors inside the five-star, five-diamond Wailea property.
Pantry — a food and beverage concept spun out of Madhappy's existing retail locations in West Hollywood, New York, Malibu, and Tokyo — positions itself as a community gathering format built around specialty coffee, matcha, and curated all-day fare. The Maui outpost adds Seoul and Aspen to the brand's near-term development pipeline, signaling deliberate expansion through luxury hospitality partnerships rather than conventional franchise or area development agreements.
Menu & Sourcing
The F&B program at Pantry Maui was developed by Executive Chef Ryan Schelling and Executive Sous Chef AJ Thalakkat in tandem with the Pantry culinary team, yielding a menu exclusive to the Resort. Maui-only beverage signatures include a Mango Sticky Rice Matcha Latte and a Banana Coconut Latte alongside Pantry's core sweet-cloud matcha and latte lineup. On the food side, the Poi Coconut Crown — a flaky pastry layered with poi and coconut — and The South Side Acai Bowl anchor the island-inspired daypart offer.
The broader grab-and-go selection covers house-made pastries, sandwiches, salads, wraps, smoothies, gelato, and sundaes, incorporating local ingredients such as lilikoi, coconut, and mango. Beverage sourcing reflects a deliberate specialty-coffee positioning: coffee comes from Los Angeles roastery Loquat under an exclusive signature blend, ceremonial-grade matcha is supplied by Japanese-founded brand Nekohama, cold-pressed juices and tonics are sourced from Maui Juice Co., and chocolate is produced from Hawaii-grown cacao by Lonohana Estate Chocolate. That supplier roster reflects the kind of hyper-local, premium sourcing strategy increasingly common in luxury resort F&B, where provenance storytelling is as central to the offer as flavor.
Property Context
Pantry Maui is the latest element in a broader, property-wide transformation underway at the 383-room resort. A reimagined Club Floor opened in May 2026, Kai Holo Spa launched in July 2026, and refreshed guest rooms and suites are slated to debut in Q4 2026. New pool cabanas and expanded cultural and wellness spaces round out the renovation scope. The café opening fits a pattern visible across upper-upscale and luxury lodging: operators are investing in branded F&B and retail concepts to extend per-guest spend, differentiate the in-stay experience, and attract day visitors who generate incremental revenue without occupying a room.
Konrad Gstrein, Regional Vice President and General Manager of Four Seasons Resort Maui at Wailea, described the addition as consistent with the property's long-standing culinary positioning. "Pantry enhances our existing collection of dining experiences with distinctive beverages, exclusive menu offerings, and an elevated all-day grab-and-go concept that seamlessly fits into a guest's stay," he said. The resort's existing restaurant portfolio already includes Ferraro's, Spago Maui, DUO Steak and Seafood, and the recently opened KOMO.
For foodservice operators tracking the intersection of specialty beverage trends and luxury hospitality F&B, Pantry Maui illustrates how fashion-adjacent lifestyle brands are using resort partnerships to pilot standalone café concepts in high-traffic, brand-aligned environments — reducing location risk while validating the format before broader rollout.
