The Promotion

Freddy's Frozen Custard & Steakburgers has elevated Rick Petralia to Executive Chef and Vice President of Training & Innovation, expanding a role he has built since joining the Wichita-based fast-casual chain in 2022. The move consolidates culinary strategy and operator-facing training under a single senior leader at a brand that now operates more than 580 locations across the United States and Canada.

Petralia's expanded mandate puts him over Freddy's flagship training program and its media resource teams alongside continued ownership of menu development. The dual charge — culinary and training — reflects a chain-level priority: ensuring that LTO execution and core-menu consistency translate reliably at the franchisee level, where unit economics live or die in prep and throughput.

Franchisee Focus

President and CEO Chris Dull framed the appointment squarely around franchisee support. "His extensive experience in operations and his focus on profitable menu solutions mean he understands the challenges franchisees face," Dull said, "and is dedicated to providing the training and resources needed to best equip our restaurant teams." That operator-first framing signals that Freddy's sees culinary innovation not merely as a traffic driver but as a tool for protecting store-level margin across its franchise system.

Petralia brings 25 years of restaurant-industry experience, an MBA from Hult International Business School, and a certified executive chef credential. Before Freddy's, he served as director of culinary innovation for a fast-casual Italian concept with more than 200 locations — giving him direct exposure to the complexities of scaling menu programs through a distributed franchise network. At Freddy's, he was appointed Director of Menu Strategy & Innovation in 2022 before this latest elevation.

Context and Outlook

The promotion arrives as the broader fast-casual segment continues to invest in culinary infrastructure to differentiate on quality while managing food and labor cost pressures. Chains in the better-burger daypart — Freddy's competitive set — have increasingly leaned on limited-time offers to sustain traffic without permanent menu bloat, making a senior chef with deep LTO fluency a strategic asset rather than a support function.

For Freddy's, which has ranked in Technomic's Top 500 and Fast Casual's Top 100 Movers + Shakers, the org-chart move also signals continued ambition on the franchise development side. With 580-plus units and an active area development pipeline, the chain needs training systems that can onboard new franchisees efficiently and hold brand standards at scale. Placing a culinary leader at the VP level with direct authority over training infrastructure is a structural bet that food quality and operator readiness are inseparable at this stage of growth.
