The Fall Lineup
Gregorys Coffee, the New York City-born specialty café chain operating more than 50 units across the U.S. under the Craveworthy Brands portfolio, is deploying a limited-time fall menu anchored by three Banana Foster-inspired beverages alongside returning pumpkin staples — the chain's most deliberate seasonal push yet as it marks two decades in operation.
The LTO beverage slate, available through October at Gregorys coffee houses, includes a Banana Foster Latte (espresso, banana, butter rum, cinnamon sugar, banana chips, oat milk), an Iced Banana Foster Latte with toasted maple rum vegan foam, a Banana Bread Chai, and a Banana Foster Matcha Latte built on ceremonial-grade matcha. Returning pumpkin SKUs — a Pumpkin Spice Latte and Smashing Pumpkin Cold Brew — round out the seasonal program. Founder Gregory Zamfotis framed the banana execution as the longest development cycle of the drop: "Getting the banana right took the longest. Once we had it, it carried across espresso, matcha and chai."
Breakfast Gets a Protein Lift
Beyond beverages, Gregorys is using the fall window to reposition its morning daypart with a revamped breakfast sandwich menu. Every housemade sandwich uses two fresh-cracked eggs prepared in-unit — a labor-intensive approach the brand is leaning into as a quality differentiator. Protein content tops out at 47 grams per sandwich. The lineup spans a Ham, Egg & Cheese Croissant; Bacon, Egg & Cheese on both English muffin and croissant; Sausage, Egg & Cheese English Muffin; and a Prosciutto, Egg & Brie Baguette layered with arugula, brie spread, and fig jam.
Jax Sperling, Vice President of Culinary & Supply Chain for Craveworthy Brands, emphasized the operational intentionality: "That is not the fast way to do it, and it is why they taste the way they do. Breakfast on the way to work usually asks you to settle for less, and there is no good reason for that." For a 50-unit specialty coffee chain competing against both quick-service breakfast incumbents and premium café operators, a protein-forward morning menu is a direct daypart-share play against players with far larger unit counts.
Loyalty and Occasion Marketing
The fall push is also paired with loyalty-program activation. Gregorys Rewards members — branded "Gregulars" — will earn 400 points (redeemable for a free drip coffee) on National Coffee Day, September 29. A buy-one-get-one frappe offer is scheduled for National Frappe Day, October 7. The loyalty mechanic is consistent with how regional specialty chains drive repeat visits without the marketing budgets of national QSR competitors.
The seasonal program lands as the specialty coffee segment continues to outpace broader foodservice traffic trends, with premium beverage customization and high-protein food attachment proving durable traffic drivers heading into fall.
