Mimi's Cafe is pushing deeper into the fall LTO cycle with a seasonal menu now live at all 38 units across nine states, anchoring the promotion around freshly baked biscuits and a proprietary pumpkin spice sauce rather than leaning solely on licensed or commodity ingredients. The Richardson, Texas-based casual-dining chain — founded in 1978 and best known for its all-day breakfast and scratch muffins — is deploying biscuits as a daypart-spanning platform, with items available from open to close and biscuits baked in batches throughout the day.

The biscuit lineup covers four builds: a Biscuit Breakfast Sandwich with crispy bacon, scrambled egg, cheddar and chipotle mayo; Biscuits and Gravy offered with either classic country herb or spicy chorizo gravy; a Fried Chicken Biscuit "Benedict" topped with parmesan-crusted chicken, poached eggs and country herb gravy; and a Fried Chicken Biscuit Sandwich finished with hot honey. Offering biscuits across the full service window gives operators a vehicle to drive check averages beyond the traditional breakfast daypart — a traffic-building lever that larger fast-casual and QSR chains have used effectively with biscuit and bread-based platforms.

Pumpkin and Beverage Builds

On the pumpkin side, Mimi's is differentiating by making its pumpkin spice sauce in-house with real pumpkin and fall spices, positioning the ingredient as a chain-wide signature rather than a purchased syrup. That sauce anchors both non-alcoholic and alcoholic beverage SKUs: standard hot and iced Pumpkin Spice Lattes, an "Oh My Pumpkin Latte" with a vodka addition, and a Pumpkin Spice Martini combining vanilla vodka, cream and the house sauce. Adding alcoholic LTOs to a seasonal beverage menu is a margin-positive move for full-service operators, where beverage attach rates and bar ticket sizes can meaningfully lift average check. Bakery items include Pumpkin Spice Muffins with streusel and sweet glaze, a shareable Pumpkin Loaf with cinnamon butter, and Pumpkin Griddle Cakes topped with warm cinnamon apples.

Lunch and Dinner Extension

The fall menu also extends into lunch and dinner dayparts, where Mimi's is leaning into lighter, globally inflected builds. A Thai Chicken Wrap layers pulled chicken breast, crispy wontons, fresh vegetables, rice and ginger peanut sauce — a direct play on the chicken wrap trend that has gained share across fast-casual and casual-dining menus this year. The Grilled Pesto Chicken, served with two sides and a housemade basil pesto, rounds out the savory offering with a flexible flavor profile that operators can position across multiple dayparts.

With 38 locations spread from California to Florida, Mimi's operates as a regional casual-dining brand in a segment that has faced persistent traffic pressure from fast-casual competitors and elevated commodity and labor costs. Leaning into seasonal LTO cadence — with a scratch-production narrative on biscuits and pumpkin sauce — is a differentiation strategy that independent-leaning chains have used to justify full-service price points and drive repeat visits from a core guest base.
