The menu's strategic hook is contrast: private-label caviar appears throughout familiar, unpretentious vehicles — crispy fried chicken, deviled eggs, and croquetas — alongside more traditional fine-dining preparations including sea bass with champagne sabayon and tagliolini with dill cream. The approach reflects a broader operator trend in which caviar-forward concepts chase volume and daypart accessibility rather than restricting the ingredient to prix-fixe tasting formats.
The Menu Architecture
Guests choose one course per tier. First-course options include deviled eggs, a lobster roll, charred citrus ceviche, and croquetas de caviar. Mains span crispy fried chicken with caviar, sea bass with shellfish and champagne sabayon, tagliolini with dill cream, and a ribeye option carrying a $10 supplement. Dessert selections run champagne sorbet, vanilla soft serve, and a chocolate tart. The three-course format at $95 per person positions Ockap competitively within Miami Spice's higher-end restaurant tier, where covers at similar fine-dining participants typically range from $85 to $135.
Oscar Andrés Brenes, the Dominican restaurateur who founded Ockap alongside Ducasse Conseil, framed the menu philosophy around accessibility without informality. "We wanted a restaurant that reflects the standards of fine dining without the formality or intimidation that often comes with caviar," Brenes said. "Pairing it with familiar flavors and unexpected dishes lets guests experience it in a completely new way."

Miami Spice has historically served as a customer-acquisition vehicle for independent and boutique full-service operators in South Florida, driving trial among price-sensitive diners who might not otherwise visit high-check-average concepts. For a single-unit caviar house still building its regular guest base, the promotional window carries particular weight — discounted covers now can translate to repeat full-price visits and retail caviar sales later.
Beyond the Miami Spice window, Ockap offers three Chef's Tasting Menus and à la carte service, plus traditional caviar service by the tin. The restaurant's retail caviar collection spans four varieties — Baerii, Ossetra, Kaluga Hybrid, and Beluga Hybrid — available in 28-gram to one-kilogram formats, a direct-to-table retail layer that adds a margin stream independent of cover count. A Caviar Hour service, running nightly from 5 to 7 p.m. beginning August 11, further extends the daypart footprint and positions the bar's nine seats as a lower-commitment entry point. The Miami Spice menu is available Tuesday through Saturday for the duration of the promotional period, aligning with Ockap's standard dinner service schedule.
