Philz Coffee is stepping outside its core coffee identity, launching a four-item matcha menu system-wide across its 80-plus California and Chicago locations as of July 21. The move marks the Oakland-based chain's first formal entry into the fast-growing matcha beverage category, positioning the handcrafted drinks alongside its established customization-first service model.

The New Lineup

All four drinks are served iced in 16-ounce format and built on matcha sourced from Uji, Japan, a region recognized globally for premium ceremonial-grade leaf. Oat milk is the default dairy alternative, with 2% milk available at no upcharge, and sweetness level is adjustable per order — consistent with Philz's made-to-order approach. The lineup is priced as follows: Iced Matcha at $6.50, and Strawberry Matcha, Strawberry Mint Matcha, and Salted Caramel Matcha each at $7.50. The $7.50 price point lands at the upper end of specialty beverage pricing in the independent and regional café segment, reflecting premium ingredient sourcing and labor-intensive preparation.

Andy Mai, Chief Business Officer at Philz Coffee, framed the launch as a direct response to sustained customer demand. "Our top two requests from customers over the years have been a rewards program and matcha," Mai said. "By pairing quality ingredients and bold flavors in a customizable way, our matcha feels both approachable and playful." The chain launched its Philz Rewards loyalty program last year; the matcha rollout is the next consumer-facing priority after that infrastructure was in place.

Category and Competitive Context

The matcha segment has surged across both independent café and QSR channels, with operators from Starbucks to regional specialty chains adding matcha lattes and flavored matcha drinks to capitalize on growing Gen Z and millennial interest in the ingredient. For regional chains like Philz — which operates entirely company-owned stores rather than a franchised network — category extensions carry different unit-economics weight than they would for an asset-light franchise system. Each new menu addition must pull incremental ticket revenue without complicating throughput, particularly during peak morning and afternoon dayparts.

Philz's decision to limit the initial matcha lineup to iced-only formats reduces barista preparation variability and aligns with off-premise ordering patterns. All four drinks are available for mobile order-ahead through the Philz app, which also serves as the loyalty redemption platform — a structure that ties new category trial directly into the rewards ecosystem and supports repeat-visit behavior.

Operator Implications

For multi-unit observers, Philz's matcha entry illustrates a deliberate sequencing strategy: loyalty infrastructure first, then category expansion layered on top of the engagement platform. The chain, founded in San Francisco in 2003 and roasting its own beans at an Oakland facility, has built its brand around premium, made-to-order coffee beverages and responsible sourcing.
