Chicken sandwich volumes at Chili's Grill & Bar have risen 175% on a per-restaurant, per-day basis since the chain rolled out its Big Crispy lineup in April — and Brinker International's flagship brand is moving to sustain that momentum with a new limited-time extension. The Chicken Parm Big Crispy, which layers the chain's Fried Mozzarella and marinara sauce atop the existing Big Crispy base, goes system-wide on Oct. 20 across roughly 1,600 domestic and international locations.
The 175% figure — measured through the end of Brinker's Q4 fiscal 2026 in June — is notable inside a casual-dining segment that has struggled to grow check and traffic simultaneously. For Chili's, the Big Crispy platform, introduced with six variations, appears to have opened a meaningful new LTO traffic lever without requiring a menu overhaul.
The Build and the Rollout
The new sandwich starts with Chili's Big Crispy chicken breast, then adds the same Fried Mozzarella that anchored the chain's viral Triple Dipper resurgence — a move that cross-utilizes an already-proven prep and consolidates supply-chain exposure on a single cheese SKU. The completed plate is served with fries, white cheddar mac & cheese, and sides of marinara and house-made ranch. At full national rollout, the item will be available by request through a team member rather than appearing on a printed menu board, a distribution mechanic that creates low-cost scarcity and drives word-of-mouth.
Before going nationwide, the LTO staged a soft debut in three markets chosen for their Italian-adjacent names: Florence, Ky.; Rome, Ga.; and Venice, Fla. — none of which have any genuine Italian heritage, a point Chili's leaned into with in-store photo activations and commemorative plates for the first 150 guests at each unit.
Category and Operator Context
"We've loved seeing how guests responded to the Big Crispy, and it got us thinking about how we could build on that with flavors we know they already love," said George Felix, Chief Marketing Officer and Executive Vice President of Brinker International. "A Big Crispy topped with our fan-favorite Fried Mozz and marinara is craveable, over the top in all the right ways and unmistakably Chili's."
The play aligns with a broader casual-dining push to compete with QSR chicken sandwich daypart traffic — a segment battle that intensified after the 2019 chicken sandwich wars and has not meaningfully cooled. Chili's is betting that a full-plate experience, including sides and dipping sauces at a sit-down price point, differentiates its offering from fast-food alternatives. The Fried Mozz tie-in also extends the lifecycle of a menu asset that generated outsized social engagement when it was named Best New Menu Item at the 2025 MenuMasters Awards for its Nashville Hot variation.
For Brinker's franchisee base, incremental chicken sandwich unit economics hinge on whether the Chicken Parm LTO sustains per-unit order velocity into fiscal 2027 or whether the 175% lift was concentrated in the novelty window of the original Big Crispy launch. System operators will be watching whether the Fried Mozz crossover extends average check without adding significant ticket time — a throughput consideration in a full-service environment where kitchen complexity directly affects table turn.
